El cambio climático y la cosecha del vino
En la última década la temperatura global no ha parado de incrementarse, esta suba se calcula en torno a un grado y una de las consecuencias del calentamiento global es el cambio de los ciclos naturales y animales. El vino por lo tanto no está exento a estos factores.
La climatología ha traído como consecuencia que se adelante la cosecha en los viñedos, esto marca registros nunca vistos y a los que debemos ir acostumbrándonos. Hoy en muchos lugares la cosecha de la uva se está dando entre 2 y 3 semanas antes de lo habitual.
Debido a las altas temperaturas producidas por este fenómeno climático, la vendimia nocturna se está popularizando cada vez más en España. Aunque no puede llevarse a cabo en cualquier tipo de condición, tiene su justificativo en determinadas circunstancias.
Este tipo de producción se da en las ubicaciones más meridionales, como por ejemplo sucede con la D.O. Valdepeñas. Este tipo de cosecha en sitios menos cálidos es perjudicial debido a que ralentiza y no da buenos resultados. Por esto es por lo que se destaca este tipo de producción en zonas cálidas donde tiene sentido la vendimia nocturna.
Al estar presenciando veranos cada vez más calurosos, los vinos se vuelven más cortos automáticamente ya que las uvas pierden su intensidad. Debido a este factor es que cada vez se hacen más vendimias nocturnas, para evitar así la pérdida de aroma de la uva.
“Al vendimiar de noche el mosto llega a la bodega a entre 22 y 24 grados, mientras que si se hace de día, puede llegar a hacerlo a 35 grados.” Aclara el secretario técnico de la D.O. Valdepeñas, Manolo Cruz
En el caso de la uva, las altas temperaturas son causantes de una maduración acelerada y un aumento en su graduación alcohólica. Se incrementa la graduación porque cada grano acumula más azúcar, producto de la levadura que se transforma en alcohol.
De manera conjunta baja la acidez del grano, ya que, el calor reduce la cantidad de ácido tartárico aumentando así el PH y el potasio, con lo que se produce vino con menos frescor, que se conservaran peor porque tienen más probabilidades de modificarse.
